Our truck oven runs at 450°C, and a pizza needs just 60 seconds inside. The trick on the street is timing: stretch the dough only after the order ticket prints.
Wind, cold, and queues all change the bake, so our pizzaiolo watches the crust, not the clock. When the rim puffs and chars in spots, it is ready for the box.
